Hello Everyone,
Valentine Day is just around the corner. I wanted to wish you all a very special Valentine's Day.
This holiday should not be limited to just romance but rather a celebration of any relationship you feel that is special to you. I will dedicate the holiday to my mom. She's very ill and I have been there 24/7 taking care of her. My Mother has always been the Sun in the Family. (I hope that all of your Mothers will shine brightly). Me, my Father and Sister did our best to protect Mom so that she could maintain her brightness. My Mother made efforts to be respected by her children as well as by others. She is the best example when it comes to giving unconditional love. She never judged us or try to be perfect. Always human, always humble. In spite of her illness she still holds on the her clever sense of humor.
Lately I've been packing salads on the go. This salad is made of purple and green cabbage, mix greens,carrots,raisins,walnuts and a simple oil and lemon herb dressing. Another salad I made this week had celery, red peppers pumpkin seeds and kale. One thing I must remember.........Chew my greens. That Cellulose which is the main building ingredient in plants, is one of the strongest molecular structures on the planet. Those of us who practically live to eat greens know the valuable nutrients that our bodies are getting. (More than any other food group). When it comes to chewing I need to chew my greens to a creamy consistency to break down the cell walls to release the valuable nutrients from within the cells.
