Nori Rolls - Great Travel Food

Hello Everyone,

The Hardest problem I had to solve as a Raw Foodist was preparing foods I could bring along on long trips. One dish to make is the Raw Nori Rolls . I Avoided this recipe at first because I thought it was too complicated to make. When I got the hang of it , I was overjoyed that it looked and tasted like the real authentic Japanese vegetable Sushi. I can pack it up in a square container and place the dipping sauce (Bragg Liquid Aminos or Nama Shoyu) in a small jar to carry along .

Here's the fun part .................... The "Rice" in these rolls is made up of Cauliflower. Seriously!
This was one of the reasons I procrastinated about preparing this recipe . For me Cauliflower was a big YUCK !! It was not the popular veggie in my household growing up . Cauliflower was the last resort when you got tired of repeating the same vegetables for dinner or when you craved cheese sauce over a vegetable that night. When I became a Raw Foodist a year ago , the list of things not to eat was Rice. " How could I live without Rice"- "Oh this Raw Lifestyle is torture " Now the Cauliflower makes a wonderful imitation of rice. Not Bad at all people.

NORI ROLLS

4 Nori Sheets
1/2 head cauliflower
1 avocado, thinly slices
any of the following veggies: shredded carrot,
cucumber sticks, mung beans, etc.

1. In a food processor , grind the cauliflower
until grainy.

2. Remove cauliflower mixture from
food processor and place a thin layer
of it on a nori sheet.

3. place slices of avocado and other
veggies in the center of the sheet

4.Roll the nori sheet, pulling it tight
as youroll up, and seal with a few
drops of water along the seam.

5 with a sharp knife, cut the nori roll
into inch-thick slices and turn face
up on a plate side by side.

6. continue this process with the
remaining sheets.

At times , I will use an assortment
of Marinated vegetables in the center.

SEA VEGGIES- Are high sources of minerals
which helps boost the metabolism and
thyroid function.

Note :
A Bamboo Sushi Mat is a helpful tool to
get the Nori Roll tight .

Make sure you use a sharp knife.

Have fun . This recipe -"Living on Live Food" by Alissa Cohen

Embracing My Journey

Hello Every one

I like to share one of my favorite quotes from the March 25, 2005, world tribune, p.2. This reflects my one year journey living a Raw Lifestyle.

"Why doesn't constant trampling defeat the dandelion? The key to its strength is its long and sturdy root, which extends deep into the earth....

I was gaining confidence in all of my efforts to overcome every sort of obstacle during the first year of my Raw Food Lifestyle. I won Admirably over myself. The main lesson I learned- "Every moment of life is precious". I feel like the dandelion with my roots long and sturdy into the earth. This will become a launching pad for my own growth and the central driving force to take what I'm doing in my life to the next level.

Yesterday was a beautiful day to get out of the city. I met up with my heartmate for a day in Tarry Town to visit the Rockefeller Estate . The weather was perfect . It was a breath of fresh air to look up to see the trees sparkling with life. We walked the brook trail. I'm was appreciative that I have someone to share the day with .

Vitamin B12 , D3 and pictures of me.

Hello Every body.

This past Monday Felt like an early fall day . The sudden change of weather makes me take extra care of my two most important essential vitamins daily as a Raw Foodist. Vitamin D3 and B12. I do have a multi vitamin in a liquid formula but these two are vital for a Raw life style. The B12 spray and D3 Serum I have by Premier Research Labs. These products are made to be placed under the tounge. This is better for absorbtion . There products are pure without toxic tagalongs.

D3 - supports many body organs : healthy bones , nerves, heart, brain , gum, lung, esophagus, breast, colon, stomach, pancreas , prostate, uterus, ovaries and kidneys.
studies propose ideal vitamin D3 intake should be 2000 IU daily or more.

B12 - It the most complex of the B vitamins. Each cell in the body depends upon it to function properly. It is vital to the cells in your bone marrow . Also The Gastrointestinal track and the nervous system. It helps prevent fatty deposits from accumulating in your liver and helps maintain normal weight.

Monday I was hanging out in Central Park in the Rain. Something about the rain make me feel calm.

Miso Soup

Hello Every one ,

Early Fall weather we are having, I had to dig for a sweater yesterday. The sudden change in the weather had me pulling out my light blue comforter for the night. For me it is still Summer and I refuse to lower the window at night. There is hope for warmer weather by the weekend.

In the meantime while I'm waiting for the warmth of summer to return, I've been preparing Miso Soup . One Raw Food Myth I had was that Raw Dishes can't be served warm. You can heat Raw soups up to three minutes on a low heat. That's good to know when you want that nice warm feeling in your stomach as Winter weather approaches . I just need to be careful not to over heat the Dishes or I will loose the life in the food.

This Recipe comes directly from "Living on Live Food" by Alissa Cohen. This is close to the authentic taste of the Japanese style.

MISO SOUP
1 1/2 cups water
1 tablespoon ginger root
2 teaspoons miso
1/4 teaspoon sea salt
1 tablespoon carrot, shredded
1. Blend water, ginger, miso, and sea slat in a blender or vita-mix until smooth
2. place in a bowl, adding in the scallion and carrot in the center of bowl on top of the miso soup

Sorry for the out of focus with this picture. After making this soup for a while I started adding different vegetables . As you can see Cauliflower, Broccoli and Red Pepper . Sometimes I will imitate the tofu by adding small cubes of Avocado.

Quilt and History

Hello Every one ,
As you all know by now I love to work with my hands. I wanted to share with you this personal project I worked on over the summer. This quilt I was working one is very important to my family. It belonged to my Great Grandmother Charlotte. She was born in Chester County SC. (South Carolina) in 1846 during slavery times and she was a young girl during the Civil War. She was a mother of 12 children, She had 11 grandchildren, 15 great grand children and six great great grand children. She was a registered mid-wife and delivered many of the children in the area where she was living. She was an Herbalist/healer and very seldom went to the doctor. When she did it was just to say hello. Everybody in the area would go to her for health and advice. My Mother Remembers her very well when she was a child . She told me Grandma Charlotte was very active. She walked everywhere. At her 90th birthday party she jumped roped with the children. For her100 birthday party she was honored by the Mayor and other city officials . She was the oldest citizen in the county at that time. She invited all the children in her neighborhood to the party. She couldn't Jump rope.
This was one of her quilts that survived . It is very old and I had to buy a special light weight needle to do the repairs. Mom told me she never wore glasses and her sight was excellent. She passed away at the age of 111. I never got to meet her . I often wonder how our conversations would have been. I'm finished with the repairs.

Thank you for reading and your listening.

Putting the brakes on weight gain

Hello Everybody

Yes, I'm a happy size 12. I've been maintaining this size for a while. June 1st was the kick- off with the Fruits soups , salads and the recipes made with nuts. I also started to eat less greens . After one month , My body started to feel sluggish. Last week , I thought that doing the one meal a day and green juice twice a day would fix that . It did not . I'm am still feeling the heaviness in the bottom of my stomach. My body is getting heavy as well. This afternoon I decided It is time for me to look at my eating habits and do some nutritional research on- line . Looking back on June ........I confess it was the Watermelon Soup . I've been making this soup three times a week. The combination of the Mint , ginger, Raw honey and lime was soooooooooo good . I got greedy . The second pleasure for me was making the Raw Blueberry Cheese cake.
This afternoon I took an hour looking up the amount of greens a Raw foodist needs to consume daily to maintain a balance. I am going to increase my green intake to 45% percent . That's the leafy dark greens. (Kale , Spinach , Collards) . This information about the non-sweet fruits was a shocker.......... I knew that tomatoes were a non-sweet fruit but cucumbers, zucchini and bell peppers !!. What !! I eat large amounts of these. Plus reading the intake of these root vegetables ; carrots and beets when I'm juicing. I'm thinking I'm full and satisfied with my eating but in reality, I am missing the daily consumption of greens. I am consuming large amounts of fruit, nuts and seeds to get my carbohydrates. Don't forget the the consumption of oils and Avocados. Let's face it it is hard to eat a salad without the salad dressing.
A fellow Raw foodist told me about the importance of eating greens. DID I LISTEN CAREFULLY - NO . I was too busy eating what I like. I am continuing my study as you are reading this.

Today I made Eggplant pizza . The nut base taste like cheese I had to disciple myself and eat less of this so that I can increase my leafy-green intake.

Papaya Soup

Hello Every one
Cool off from the heat with a chilled Papaya Soup . Look at that happy bright orange color.

Real easy to make !!

1 small ripe Papaya
1/2 mango, chopped2 tablespoons fresh orange juice
1 tablespoon fresh lime juice
2 strawberries

Cut the fruit and place in the blender and process until smooth. You can serve immediately or chill in the refrigerator for two hours to enjoy it cold. At times the fruit may not be ripe enough or sweet so I add just a touch of honey . Have fun and enjoy the rest of summer.

Today is the last day of my mini juice cleanse . Four days of juicing and eating one meal , is not long but I did miss my sprouted buckwheat cereal in the mornings . My digestive system did have a rest at short intervals.
Here is my menu
Breakfast - green smoothie with blueberries
lunch - Papaya soup, Mango and Avocado Salad, cucumber salad, green soup
snack - grapes
Dinner - Green juice - carrots , parsley, kale , lemon, spinach and apple

This was the last day for this skirt. It used to be my sundress for five years , then I converted to a skirt for past two summers. It is time to let it go and make a new skirt . With it with is the $1 top and John Fluevog sandals.Thank you for reading.

Into the Pink

Hello Every body ,

My Pink Linen Dress is finished . For the past year I've been buying brighter, lighter, cherry colors for fabrics. I kept the shape simple . I like to be honest and skillful when I'm creating a garment. The accessories I will wear with the dress - Rose Quartz Necklace and belt are from a Thrift shop. The Shoes I had for 17 years. A couple a more years and they will be vintage.
This is day three of my mini juice cleanse. Now the green juice intake is having effect. I am cleansing out a few toxins and feeling a little tired from it. I wish I could partake in a full time juice fasting program . But my daily activities at the moment will not support this. It would not be wise at this time. A one day juice fast or the one meal a day along with fresh green juices helps.
Note: If you decide to do a Juice Fast make sure you have done enough research or have support .

Here is my meal for the day . I prepare the Raw Foods myself
Breakfast - Green juice smoothie with one apple (2 - 10oz glasses)
Lunch - Fennel and Fig Salad, Zucchini pasta and marinated vegetables , Strawberries with Cashew whip cream
Snack - Raw Flax seed crackers with a Raw Almond butter.
Dinner - Green juice (1 glass 8oz)

Thank you for reading.

One Dollar Bargain

Hello Everybody ,
How are you today? Tuesday got hot again. I was shopping at a Farmer's market and one of the merchants was handing out free slices of Watermelon for the customers. What a sweet treat !

Who ever said You can't get much for your dollar - didn't know how to shop. Throughout the five boroughs There are clothing Warehouses where you can get a bargain . You just have to look for them. Love Eating and Juicing My Greens

Hello Every one,

The Fall is coming . Are you ready ? I did some light fall shopping today. Picked up a new linen skirt and two new turtlenecks from Goodwills.

During the change of the season, I do four days of a mini cleansing routine which consist of a large green smoothie for breakfast, a Raw Food Meal for lunch and a glass of green juice in the evening each day. Monday the 16th to Thursday the 19th is my cleansing time.

Believe me I did not start off loving the green juice. A while back, I had a friend whom I considered a "healthy nut freak" I would tease her by saying "you will die healthy and be a beautiful corpse " . I would make a face every time she would offer a green juice drink to me . She would say " you don't know what you are missing " I would answer back "Yes I do, it looks like pond scum ". Then I would wave a cheese burger in-front of her and lavishly eat it. Now, I have appreciation for her consistency and never giving up on me to change the way I ate.

CHLOROPHYLL POWER I Eat the Green-leafy vegetables daily for the calcium and heavy minerals to keep building up strong teeth and bones. The green leaves alkalize the blood and calms the body. Now you understand why Raw Food Eaters are so peaceful. When I began doing this lifestyle the first thing I notice was the wrinkle on my forehead went away and I began to hear compliments on how great my skin looked. I had this healthy glow that didn't go away. Other benefits; My nails became stronger , My vision sharpen , my hair became softer from the protein and that yucky morning taste in the mouth disappeared. I remember how I would crave unhealthy foods when I got tired. Now I can't go a day without my greens.

The question you may ask is - why or How or what the heck is Raw Foods ? The easiest answer I can give from my own experience is , Our Human cells are living and it makes sense that our nourishment consist of living plant cells. Foods that consist of living cells have all the qualities necessary to satisfy the demands of the human body.

Important note to you: I am not doing this all alone. I had to find a medical Doctor who told me what nutrients I needed to take daily. If you are considering Raw Foods - Do your research and understand what your body needs.

I will post my meals from the 16th to the 19th to show you I am eating well.

Monday
Breakfast - Green smoothie - Spinach , kale , collard with blueberries , strawberries and honey.
Lunch - Marinated greens, Zucchini Pasta with Marinara sauce and nut meat balls.
For a snack - Raw Potato Chips. For dessert- Raw Cherry Ice Cream on top of two bananas .
Dinner - Green Juice
I prepare this all myself.

I was in the Green with an African print dress I made . The Parakeet print inspired me to make a fun dress for the summer. Also Wearing John Fluevog sandals . Thank you for reading.
