Summer time is the time for Salads . I make a variety of them. This recipe comes straight out of the "Living On Live Foods" by Alissa Cohen. The reicipe book has been my rock when I need support for my Raw Food lifestyle. Alissa Cohen's book is honest and encouraging. The book teaches you what a raw and living food diet is. Note : Make sure you use wild rice. Make sure the Wild Rice you buy has not gone through a heat cleaning process. The heat causes the Wild Rice not to sprout. It takes 1 cup of wild rice to soak for 12 hours and sprout in 2-3 days. You will have 3 cups .
WILD RICE SALAD
2 cups

2 red peppers, diced
2 carrots, diced
2 zucchini, diced
2 stalks celery, diced
Dressing
1/4 cup of honey
1/4 cup of miso
1/4 tablespoon apple cider vinegar
2 tablespoons olive oil
combine all salad ingredients and place in a large bowl.
combine dressing ingredients and pour over salad. mix well and let sit for a few hours or overnight.
I've been making this for a while now . I'm comfortable with adding my own combination of vegetables . At times I like to make a Hawaiian version with pineapple! It makes a great side dish. For a lunch dish I stuffed a white pepper with Wild rice sitting on top of mixed greens . On the side ; apricots, kiwi , nut mixture , raisins and spouts I grew myself.
Note. I soaked the white pepper in lightly salted water to soften the texture .
